To make the creamy sauce for the seafood enchiladas (or smothered burritos if you are being picky about using the flour tortillas in an enchilada), melt the butter in a saucepan. Whisk in the flour and simmer for a couple of minutes. Add the milk, sour cream, white pepper, diced jalapeno, and cumin. Spoon sauce over enchiladas, and sprinkle with cheese.

  1. Preheat oven to 350
  2. Melt butter in deep skillet
  3. Add onion, crab and any salt and pepper. Saute till onions are clear
  4. Add cilantro, sour cream and 1 cup cheese
  5. Blend together and add any hot sauce
  6. Split into 4 tortillas and wrap up
  7. Place in baking dish, cover with enchilada sauce and rest of cheese
  8. Bake for 25-30 minutes.

Add the milk, sour cream, white pepper, diced jalapeno, and cumin. Spoon sauce over enchiladas, and sprinkle with cheese. Roll up tortillas; place seam sides down on sauce in dish. Make the enchiladas by tightly rolling the tortillas and place seam-side down in the baking dish. Pour the remaining enchilada sauce over top of the enchiladas.
