  2. Coat the squash with 1 tbsp of oil. Season. Roast for about 20 mins
  3. Cook your pasta according to instructions - keep 1 tbsp or so of the cooking water.
  4. Heat the other 1 tbsp of oil in a large shallow pan.
  5. Add the onion and sauté for about 10 mins until translucent.
  6. Add the sage and sauté for 2 mins.
  7. Add the walnuts and roasted squash. If you’re using cheese, add now or at the next step. Cook for about 5 mins, stirring regularly.
  8. Take off the heat and add the pasta and saved cooking water. Season.
  9. Serve with a sprinkle of chopped sage and/ or cheese. Enjoy 😋
